A modern Swiss table, centered on fire, cheese, wine, and occasion.
Raclette au Vin is an elevated, contemporary expression of one of Europe’s most convivial dining traditions. It is not a themed Alpine chalet, nor a restaurant built around nostalgia. It is a polished, immersive destination where guests gather around the table, select their ingredients, share a bottle, and participate in the making of their own dinner.
At its heart is the Raclette Table: a handsome, six-place tabletop grill that transforms dinner into a warm, social ritual. Beneath its heated crown, individual cheese pans slowly bubble and bronze; above, guests grill split sausages, thick slices of cured sausage, pear wedges, vegetables, and seasonal accompaniments at their own pace. Baskets of rustic bread, baby potatoes, cornichons, pearl onions, and small composed accompaniments complete the table. A guest draws out a pan by its protected handle, tips molten cheese over the plate, and the conversation continues. The experience is unhurried, tactile, and unmistakably memorable.
Wine is not an afterthought—it is part of the name and the rhythm of the evening. Dry white wines lead the conversation, chosen to complement the richness of melted cheese and the salt of charcuterie, while a carefully edited selection of reds, aperitifs, and spirits gives the room its proper after-dinner life.
While raclette is the signature and the draw, the menu is designed to make Raclette au Vin a complete first-class occasion restaurant. Guests may begin with a beautiful cheese-and-charcuterie board, a warm croûte au fromage, a delicate Alpine mushroom dish, or a crisp, acidic salad that cuts through the richness of the table. Main-course options beyond raclette can include a deeply satisfying fondue Savoyarde, a refined tartiflette or croziflette, golden rösti with elegant accompaniments, and seasonally composed dishes rooted in the same Swiss–Savoyard sensibility. The goal is not a sprawling menu; it is a concise collection of dishes with real identity, all designed to belong beside a great bottle of wine.

Then comes the theatrical finish: La Bouteille Fondante. A hollow dark-chocolate wine bottle arrives at the table, surrounded by cubes of tender cake and bowls of fresh fruit. Warm cassis or berry liqueur is poured slowly over the bottle’s neck. The chocolate begins to soften, then gives way, creating a rich molten pool for dipping. It is a dessert with genuine surprise—beautiful, indulgent, and made to be remembered and shared.
Raclette au Vin is dining as an occasion: intimate enough for a date, celebratory enough for friends, and distinctive enough to become the restaurant people recommend before they even finish dessert.
The Summit Table Society™ honors the guests who return to Raclette au Vin to share the table, discover new wines and make an occasion of the evening. Members receive preferred access to special occasions, early notice of seasonal offerings and thoughtful recognition throughout the year. It is our way of welcoming those who understand that the best evenings are not simply reserved—they are shared.
